Lime the way

The last “official” weekend of summer is upon us, what better way to spend it relaxing by the beach with an easy cocktail and a dessert recipe to-go! Both recipes will describe how to make in a flash and how easy they are to transport wherever your Labor Day plans will take you! I have always believed that nothing says summer quite like lemons and limes! My signature recipes for summer-time desserts always include lemons or limes. I just love the colors and the freshness they all bring to any table.

Anyways lets get to the good stuff! First, lets chat about this amazing cocktail I created with just a few of my remaining ingredients from when I made the key-lime cheesecakes (below)! Let me just say real quick, I have a small obsession for cocktail displays…. I am not entirely sure where it derives from, but I love the look of unique cocktails. And I have never seen a bad “Fizz”!

Instructions:

  • In a mason jar, fill your jar with 1 to 2 ice cubes

  • Squeeze 1 lime over your ice cubes

  • Add 2 oz. Vodka (I used Skinny Girl’s because the flavor is subtle and well, hey its summer)

  • A squirt (or 2) of honey l

  • Close the jar and shake what your mamma gave ya!

  • Pour the Sparkling Water just until it hits the lip of the mason jar

  • Open and enjoy! Ahhh….

  • If you wanted to take it one step further, you can prepare ahead of time lemon and lime wedges!

To makes thing's a little better, let's add No Bake Key-Lime Cheesecake in a Jar to go along with this drink!

Instructions:

  • Crush up all of your graham crackers (really take out your aggression here)

  • Combine crushed up graham crackers, sugar and melted stick of butter.

  • Take a spoon and evenly cover the bottom of every mason jar (about 6 jars). Make sure to press the graham cracker mixture some-what firm to cover any hidden spots or air pockets along the bottom of the jars. Set the jars aside.

  • In a large bowl, add cream cheese, greek yogurt, honey, vanilla extract, lime juice, lime zest, sugar and food coloring (if you so choose). With an electric mixer, combine ingredients until smooth and creamy!

  • Evenly fill the mason jars with cheesecake mixture. Cover with plastic wrap and let chill in the refrigerator for 1 hour.

  • While cheesecake is cooling, prepare your whipped topping by combining the white sugar, heavy cream and vanilla extract in a large bowl.

  • Using your electric mixer, whip all the ingredients together until the mixture creates light and fluffy peaks (about 30 seconds to a minute).

  • When the cheesecake is done cooling, remove the plastic wrap and garnish with whipped topping and a lime wedge.

  • Twist the cap onto the mason jar and….Tadaa! Dessert made easy and mobile!
